Anchovies

The bright silver of the sea!

For centuries, anchovy fishing has been the main source of livelihood for many rapalline families and, even today, in the nights from April to October, the solitary fishing boats can still be seen, shining on the horizon. Anchovies are precious, because they can be eaten fresh – marinated with lemon juice, fried, breaded like cutlets, stuffed, baked with potatoes, in soups and appetizing sauces – they can be preserved thanks to salting and once they were used as bargaining chip with the populations of the interland.

Curiosity: To escape predators, the anchovies can swim swirling in a balloon shape: this phenomenon gives the title to a famous song by Genoese songwriter F. De Andrè.
